Caviar One

A showstopping way to enhance prosecco with rhubarb caviar .

    Ingredients

  • 30ml rhubarb and ginger gin
  • 10ml (2 teaspoons) Simple Sugar Syrup
  • 15ml (1 tablespoon) Citric Acid Dilution
  • 1 dash of lemon bitters
  • 30ml prosecco
  • 15ml (1 tablespoon) Calcium Solution
  • Ice cubes
  • 1 pellet of dry ice
  • 5ml (1 teaspoon) Rhubarb Caviar

    Preparation

  1. Pour the gin, sugar syrup, citric acid dilution, lemon bitters, prosecco, and calcium dilution into a Boston shaker .
  2. Add some ice cubes and stir for 10 seconds, Then strain into the chilled flute .
  3. Add the dry ice and serve with the rhubarb caviar liquid on the side in a pipette or syringe .
  4. To drink, slowly drip small droplets of the caviar mix into the drink until the pipette is empty .
  5. Do not drink the dry ice
  6. wait for it to dissolve before drinking .
