Thyme Flies

Created for a French-Mexican fusion bistro in Paris with thyme and avocado as a unique combination .

    Ingredients

  • Sprig of thyme (dried thyme works too)
  • 1 ripe avocado
  • 2 ounces pineapple juice
  • 1 1/2 ounces Don Julio Blanco Tequila (or Fidencio Mezcal)
  • 1/2 ounce fresh lime juice

    Preparation

  1. Muddle the thyme sprig in a cocktail shaker
  2. taking care not to destroy or rip the leaves.
  3. Carve out the flesh of the avocado and mash it to a soft pulp.
  4. Add all remaining ingredients and ice and shake the mixture for at least 12 seconds so the avocado can fully mix with the liquids.
  5. Strain into a martini glass.
